Blue is the colour of the sky and by association relates to the heavens and God making blue a spiritual colour. I checked, and you are right that blue is sometimes used to symbolise religious feeling. Whether that is the meaning of the dream depends on how the dreamer thinks of the colour blue. For example, I don't associate blue with religion, so if I dreamed about the colour blue, it wouldn't have to do with relation. Also, you can't make the intellectual leap to assume that because blue represents religion, therefore God approves of anything that is covered by the colour blue. It could just as well be that the thing the blue (sky) is covering is evil, and the blue is trying to cover it (the evil thing) up.
Your statement abou the use of colour in Nature does not make sense, though. In Nature, colour might be used for camouflauge, or to let potential predators believe that a plant or animal is poisonous and leave it alone, or for a plant to attract insects to help it become fertilized. In the case of the sky, the sky appears blue (sometimes) because of the way sunlight refracts through the atmosphere. The colour of the sky doesn't have a use. It's just the way our human brains interpret the light rays from the sun as the pass through the atmosphere and hit our retinas. In this intance the colour blue doesn't have a use, it's just a byproduct of a physical process, similar to the way that oceans appear green due to the photosynthesis of algae.
It's possible that you have a different meaning of "use", that is, the use of the colour to the individual. For example, the colour of the sky could be useful to a painter who paints a picture with a blue sky, sells it, and makes a lot of money. But once again, that would depend on the individual.
